In conjunction with my (failed) attempt at 31 days of Meatless Meals, I made some pretty rad breakfast muffins. I knew that my flight from STL to MIA was one of those “you must be kidding me” early flights and that breakfast options would be limited. By taking my own, I could sleep just a tad later and not have to worry about being hungry at the airport. Dad and I both agreed that these muffins were delicious.
Finally, I was a quilting mad-woman this week, finishing 4 more quilt tops before I left; which, thankfully, brought me up to 12 completed tops and 5 completed quilts – right on track to finish the 26quilts project in April.
- I added more instagram project life swap cards. This week, that cute owl card is from a fall-themed swap organized by AmandaFay back in September. I love that she themed the swap – I got a ton of great autumn cards to use in my layouts.
- Dad and I picked out a new chair for the living room (his old chair was in serious shambles and causing more pain to his hip). The new chair was delivered the morning before I left for Ecuador.
- I ended up packing 4 bags for Ecuador – and it was seriously like an adult version of tetris trying to figure out what to put where to meet the size and weight restrictions.

*** I take & process 100% of my photos using just my phone; and most of the time, I print straight from my phone to Walgreens via the Printicular app.
